HARVESTING INSPIRATION: Vineyard Triumphs Amongst Challenges

 

 

Amidst our vineyards, 2023 blessed us with grapes of exceptional quality, reflecting their terroir’s true essence. While the extended harvest season brought its own unique challenges, our diligent winemaking team patiently worked with the new opportunities presented to us.

Under the seasoned guidance of Winemaker Kirk Venge and the inspiring leadership of Director of Winemaking Brett Weis, we saw yet another successful harvest promising an enticing array of diverse wines, waiting to be unveiled and savored.

 

OUR LOVE FOR CABERNET: Unveiling ENAXI and The Cabernet Club

 

Speaking of which, this year additionally brought us the exciting unveiling of our newest addition to the Eleven Eleven portfolio: the 2019 ENAXI Reserve Cabernet Sauvignon. Nine years in the making, our inaugural reserve wine epitomized elegance and refinement, a testament to the culmination of our winemaking artistry.

Harvest at Eleven Eleven holds numerous enjoyable aspects to me; my role as Cellar Master is never monotonous, with every day bringing forth a variety of details to pay attention to. The abundant energy and upbeat attitude during harvest is invigorating, making each day exciting and fulfilling. I have been a part of the Eleven Eleven team since June 2019, bringing it to approximately 4.5 years now. My journey of winemaking initiated with my first harvest in 2008, exclusively in Napa Valley, laying the foundation for a decade-long passion.

My favorite Eleven Eleven wine is our 2018 Laki's Estate Cabernet Sauvignon, which turned out exceptionally well-rounded. I greatly enjoy pairing it with spicy Carne Asada and roasted peppers on the side for a meal.

Having been an integral part of the Eleven Eleven team for ten Harvest seasons, my experience and fondness for this special place has only continued to grow over time. In total, I've been making wine for twelve years, honing my skills and deepening my appreciation for the craft. One aspect of the Harvest at Eleven Eleven that I particularly relish is the delightful aroma produced during fermentation. 

Among the diverse range of wines we produce, the Destin Estate Syrah holds a special place for me, as it is my favorite to produce, encompassing all the passion and dedication I hold for winemaking.

Harvest at Eleven Eleven is a thrilling rush of excitement – life is never still during this time of year! The robust teamwork and seamless communication make it incredibly enjoyable to be a part of this dedicated team. Despite the hustle and bustle, the days pass by swiftly because of the fun we share by working together. I've been with Eleven Eleven for around 3.5 years now, and my journey in winemaking spans a little more than a decade – 11 years to be precise – all of which I've spent in Napa Valley. I started my professional venture in St. Helena, eventually ending up in the Oak Knoll District.

Among all the wonderful wines we've produced, my favorite would be the 2019 Laki's Estate Cabernet Sauvignon – its smoothness and pleasant nose make for a standout wine! A juicy, medium-cooked steak complemented by grilled veggies serves as the perfect pairing to bring out its distinct flavors.

My favorite part of Harvest at Eleven Eleven is undoubtedly Halloween – not only does everyone dress up, but the competition for best costume is taken very seriously! Last year, I was Naruto, though I'm still brainstorming for this year - but I plan on winning! I've been a part of the Eleven Eleven team since August 2021 and have been making wine since 2018, marking this year as my sixth harvest. It's honestly hard to believe how fast time has flown!

One wine that stands out to me the most is our Beckstoffer Sauvignon Blanc; its release is something I anticipate every year. When it comes to a food pairing, I highly recommend spicy shrimp ceviche to complement the wine's flavor profile excellently.

One of my favorite parts of Harvest is the process of pressing grapes. I love to see it happen - especially the whole-cluster white varieties are fascinating to watch go through the bladder press. I've been with Eleven Eleven for about 3.5 years, enhancing my winemaking journey that spans over 10 years. 

My favorite offering from Eleven Eleven's portfolio is our 2020 X∙I Cabernet Sauvignon, primarily for its flavors and harmonious tannins. To enjoy it to the fullest, I pair it with a Mexican plate featuring red mole, a dish that carries just the right amount of spice. Truly, nothing compares to the version prepared by my mom – it's the best!

Spring 2023 is officially here, and we could not be more excited to welcome in this season of renewal with a refreshed sense of energy. With warmer weather on our terrace, a selection of new wines to savor, and the start of bud break in our vineyards, spring reminds us that there is always a fresh start waiting just around the corner.

As springtime tends to also bring the first few glimpses into the upcoming harvest season, we thought there was no better time to share a little bit more about our approach, values, vineyards, winemaking practices, and our efforts to lead a more sustainable and organic business model, inside and out. 

 

An Honest Approach

Throughout the course of my career—and well before Eleven Eleven—my entrepreneurial spirit has always prevailed. My roots coming from Nebraska, where my father farmed the land for over 40 years, was where I learned about hard work and the values that come with it—like commitment, perseverance, and excellence. Combined with my years of business experience, strong values, and passion for connecting with people, these traits ultimately laid the foundation for the partnership venture of Eleven Eleven Winery—where, to this day, I instill these very values in each and every bottle of wine we produce.

My commitment to quality paves the way in all aspects of our business. From premium customer service to efficient farming practices, through my leadership, we strategically plan for exceptional hospitality in our tasting room and implementation of sustainable and organic programs in our vineyards.

Diversity of land, people, and process is deeply rooted in our core. 

 

Our Vineyards and Farming 

Since arriving in Napa Valley in 2012, the three vineyards in the Oak Knoll District AVA of Napa Valley have been farmed with care and intention to produce the best quality fruit–Laki’s Vineyard (Cabernet Sauvignon) Destin Vineyard (Syrah, Merlot, Malbec, and Riesling) & Eleven Eleven Vineyard (Cabernet Sauvignon, Petit Verdot, and Cabernet Franc). In collaboration with Winemaker Kirk Venge and Renteria Vineyard Management, we now have three places to literally “establish our roots'' and start building our winery from the ground up. With aligning values, Renteria Vineyard Management embraces innovation while respecting tradition. They believe that family comes first and treat their clients, employees, and the earth with the utmost care and respect.

While growing a wide selection of Rhone & Bordeaux varieties on our three estate vineyards, we also source other varieties throughout Napa Valley and Sonoma County. Allowing us to round out our portfolio of wines, outsourcing gives us access to the very best quality of grapes grown in optimal conditions for those specific varietals. These vineyard sources are highly allocated and sought-after throughout wine country—including Beckstoffer, Dutton Ranch, Calesa, Bacigalupi, Saddleback, and our newest addition, Vivio Vineyard.

Replanting—Destin Vineyard

As you may have already seen, we recently released our newest vintage of Rosé of Syrah! Previously sourced from our estate Destin Vineyard, this wine was alternatively sourced from Vivio Vineyard for the 2022 vintage, due to a replanting of our Syrah vineyard last year. Replanting Destin Vineyard has allowed us to diversify our estate varietal selection and refresh the land laying the foundation to implement sustainable organic farming practices.

Sustainable Practices

We are committed to sustainable practices at every level of our business. Our team produces wines as organically as possible, reducing our carbon footprint with fewer tractor passes and carbon-neutral shipping through WineDirect Fulfillment. We also use resources more efficiently with solar power and precise irrigation. We have plans to change our farming practices to further our commitment to organic farming by transitioning each of our vineyards to organic viticulture.

Throw Your Most Elevated Holiday Party with Eleven Eleven Wines

We know, the holidays are often coupled with occasional stressors—gift shopping, dinners with the in-laws, and travel, to name a few. But, it can also bring the most rip-roaring fun at festive holiday parties!

Plan ahead:

However much you can get ready ahead of your event, the better. Whether it’s writing out your to-do list, making dishes ahead of time, or putting up your decor early, you’ll thank yourself later when it comes down to crunch time.

So before you go breaking the bank on new lights, trees, the whole shebang, take a look at what you might already have. Always overestimate when buying food and beverages. It’s much better to send your guests home with tasty leftovers than to leave them hungry in the midst of entertaining. How to: Store your wine for upcoming seasonal parties, casual drinking, and more.

As we head into the holidays, there are sure to be many opportunities to pop open a bottle (or two) of wine. Whether it’s at a seasonal gathering, an elegant dinner party, or just a casual night in, you’ll want to make sure your wine is at its best—and if you ask us, it all starts with how it's stored.

Need a little refresher on the basics? Keep reading for some Wine Storage 101 — Eleven Eleven style.

Temperature is key.

Wine’s number one enemy? Heat. Without the proper temperature regulation, your favorite wines can go from delectable to dreadful. In general, the ideal temperature range is between 45° F and 65° F (55ºF being the perfect go-to). Anything hotter will “cook” your wine, resulting in flat aromas and flavors. And anything cooler can dry out the cork and cause damage over time—most household refrigerators remain around 40° F, so if that’s where you typically store your wine, we suggest keeping it short-term.

Keep it horizontal.

Why are wines stored horizontally? It serves more than an aesthetically pleasing purpose, we promise. Keeping wine on its side helps keep the cork moist, which is key for long-term storage, as a dried-out cork can cause seepage and premature aging. Although not necessary for wines with screwtops, or those being planned to be enjoyed in the short-term, horizontal wine storage is still an efficient strategy in itself. 

Turn the lights down.

Off, in fact. Whether you’re storing it for months, weeks, or days, keep your wine in the dark as much as possible. Light, especially sunlight, can damage wine’s flavors and aromas and cause premature aging. Fun fact: one of the benefits of colored glass bottles (such as our own) is to also protect from light—they’re like sunglasses for wine!

Recork right away.

While a good bottle of wine should never be hard to finish, you should never feel rushed in doing so. When stored properly, an opened bottle of wine can last 3-5 days. The key is to recork it promptly and tightly to best extend a wine’s shelf life and retain its original qualities. While simply sticking the cork back in will be fine for its next few days in the fridge, we suggest upgrading to a wine vacuum pump for the ultimate airtight seal.

Curating your own unique collection can be one of the greatest pleasures of enjoying and drinking wine. But without proper storage, even the best wines can be ruined. All the nitty-gritty specifics may sound daunting, but at the end of the day, just following these few simple guidelines should keep your wines good and safe until you’re ready to drink them.

I have been with Eleven Eleven since the very beginning in 2012. Starting as an independent contractor, then transitioning to a full-time employee, I have had MANY different roles at the winery over the past ten years. It has been one of the best personal and professional experiences getting to be a part of and see what it takes to build a business since its foundation. 

What first led you to a career in hospitality? 

Having been born and raised in Napa Valley, there was a high likelihood that I would eventually end up in the wine industry. Really, I found myself in hospitality because I grew up in a hospitality family. Starting when I was a child, I would do event service for my mother who is a Private Chef and Event Coordinator. My father worked in the restaurant industry before eventually opening his wine retail shop in 2000 where I also worked after school. From age 10, I was learning about different wine regions and producers as well as wine sales, wine shipping, wine laws, and the industry as a whole. After graduating college with a Degree in Business Marketing, I moved back to Napa Valley which led me right into working for Eleven Eleven. Looking back I realize that everything I have done and experienced in my life has led me to where I am today, in the wine industry, at Eleven Eleven. 

What's your favorite thing about working at Eleven Eleven? 

First and foremost, the people — my colleagues that I have the pleasure of working with AND the supporters of Eleven Eleven that I get to meet and know. Getting to enjoy our outstanding wine pretty often doesn’t hurt either!

What hobbies, activities, etc. do you like to do outside of work?

You often times can find me in or by a pool, on a tennis court, working out, traveling, at a concert, or spending time with my friends and family.

Favorite quote/personal mantra?

“Nothing is impossible."

Favorite place to go to in Napa Valley? 

Bistro Don Giovanni is a must when in Napa Valley — whether for lunch or dinner, I have always had a stellar dining experience. I also love walking around Yountville and enjoying all that it offers.

Favorite Eleven Eleven Wine and food pairing?

Calesa and/or Bacigalupi Pinot Noir paired with any Italian pasta dish.

How long have you been with Eleven Eleven?

One year!

What first led you to a career in hospitality? 

I was going to college for a degree in mathematics and couldn't find a career that excited me. I was working as a barista at a local coffee shop and loving every day, and I happened to be approached by someone in the industry who offered me a job at a boutique tasting room. They covered my wine education, and eventually, I grew into hosting tastings full-time!

What's your favorite thing about working at Eleven Eleven? 

The intimate experiences. I love being a part of a smaller brand because each experience with guests is more one-on-one. You really get to develop meaningful relationships with people and hear about what is going on in their lives. I appreciate the people I have met while being here. 

What hobbies, activities, etc. do you like to do outside of work?

Lots of video games and cooking/baking. I'm an avid gamer, frequently excited for any downtime to game with my better half. I also get so excited about baking new recipes (particularly cookies), cooking new dishes, and I just got into creating homemade ice cream for the summer!

Favorite quote/personal mantra?

Be the change you want to see in the world.

Favorite place to go to in Napa Valley? 

I'm not sure. I get really excited about coffee shops, so I'd have to say Southside Cafe or Ritual for coffee. My better half and I love walking through Oxbow Market to grab some spices, food, coffee, you name it. There are great gift items there too. For brunch, La Cheve. I love their cornmeal pancakes and their chilaquiles!

Favorite Eleven Eleven Wine and food pairing?

I love the Estate Cabernet Franc with Bolognese. My partner makes some delicious homemade Bolognese with homemade pasta! I love how well the Cabernet Franc works with the tomato, the herbs, and the meatiness. We also use our own herbs in our herb garden (Oregano, Rosemary, Basil, etc), which only makes it more satisfying. I'm very spoiled!

How long have you been with Eleven Eleven?

Just over two years.

What first led you to a career in hospitality? 

It's a dynamic industry where you get to meet and interact with lots of different people on a daily basis - never a dull moment! It's nice to be able to show people a good time and expose them to amazing experiences - food, wine, etc. 

What's your favorite thing about working at Eleven Eleven? 

Being able to share our delicious wines. As well as having so many guests tell us we were their favorite part/highlight of their trip to Napa Valley. 

What hobbies, activities, etc. do you like to do outside of work?

I love traveling to new places, landscape and cityscape photography, exercising, and reading.

Driving up and down Silverado Trail and taking in the beautiful views.

How long have you been with Eleven Eleven?

9 months

What first led you to a career in hospitality?

I graduated from college and needed to make some money to survive, so I became a banquet bartender at the Carneros Inn, which after 5 years evolved into me becoming their Food & Beverage Director property-wide. After 15+ years of F&B directing, I decided to try my hands at DTC wine sales and have been an active host for 8 years now.

What's your favorite thing about working at Eleven Eleven? 

I deeply enjoy the Ownership, Hospitality, and Production Teams and the brilliant ambiance of 11:11 Winery.

What hobbies, activities, etc. do you like to do outside of work?

I am a nationally recognized Visual Fine Artist, so when I am not hosting guests at 11:11 Winery. I am in the studio painting for high-end collectors and or installing my Fine Art in collectors' homes. I also enjoy networking and building relationship equity, hiking, exercise, and sports.

Favorite place to go to in Napa Valley? 

Bistro Don Giovanni is hands down my favorite restaurant to dine. The food, ambiance, energy, and frequency of the restaurant bring me joy.

I love the Eleven Eleven Destin Estate Syrah(Any vintage) paired with wagyu ravioli with blistered tomatoes, asparagus tips, and black truffle oil.

How long have you been with Eleven Eleven?

I have been with Eleven Eleven for a little over 2 months.

What first led you to a career in hospitality?

I had a background in food and it made sense to move to Napa and delve into the wine industry. After almost 26 years in Napa, it was the best decision I made.

What's your favorite thing about working at Eleven Eleven? 

Of course, the wines. The beauty of the winery itself is stunning. The experiences that guests receive, create memories and are something they will have with them for years.

What hobbies, activities, etc. do you like to do outside of work?

I love music and try to see live music in Napa whenever I can. Of course, there must be dancing.

Favorite place to go to in Napa Valley?

Whenever I can eat on the water, I am a happy girl, ANGELE. Sitting outside at night with the lights and fountain, would have to be Don Giovanni. For great sushi, take a drive to Calistoga and visit Sushi Mambo. The list is so extensive, you just have to come and see it.  For music, The Blue Note, Uptown, and Oxbow River Stage.

Favorite Eleven Eleven Wine and food pairing?

Bacigalupi or Calesa Pinot Noir served with fresh salmon, celery root mashed potatoes, and fresh haricot verts with shallot butter sauce. Yeah!

How long have you been with Eleven Eleven?

Just over 9 months.

What first led you to a career in hospitality?

Have always loved hosting great food and wine experiences with friends while having great conversations and learning new things through those conversations.

What's your favorite thing about working at Eleven Eleven? 

Besides working with the best staff in the business and the amazing leadership, my favorite thing would have to be working at a gorgeous property that people from all over the world visit, and I get to meet and interact with to start new relationships.

What hobbies, activities, etc. do you like to do outside of work?

Outside of work I enjoy running/ being active, traveling with my wife, wine tasting (of course), and searching for unique dining experiences.

Favorite place to go to in Napa Valley?

For tastings, I love going to Sodaro Estate, but if I am not tasting I always enjoy dining out downtown or catching a summer concert at the Oxbow.

Whether running around the playground, playing step-in tutor, or cooking delicious (yet picky-eater-satisfactory) meals, being a dad requires dedicated work day in and day out. Take time to talk to them, listen, and let them ask as many questions as they can. It will amaze you what they retain and understand about the world around them.

I will say my favorite thing to do with my kids is to make memories and we like to do so by going on a lot of road trips. We also enjoy watching movies, playing, and taking our dogs on walks.

My favorite thing about being a father is that they make me a better person with their unconditional love. I love all the cuddles, hugs, and kisses, and watching them grow up and blossom.

Any wisdom or advice to other fathers?

Don't take time for granted because time goes by very quickly. The days might seem long but the years are very short. Also, not all arguments need to be won.

When my seven-year-old and I go for a morning bike ride to enjoy the beautiful view of the Napa Valley. When it comes to my little princess (one-year-old) I would say that my favorite thing to do with her is to make her laugh and be chasing her everywhere because at her age she is touching, eating, climbing, running, and exploring everything! 

Favorite thing about being a father?

My favorite thing about being a father is that I enjoy every single minute that I spend with my kids and I wouldn’t change those moments for anything in the world. 

Any wisdom or advice to other fathers?

Some words of wisdom I would like to share is that being a father is a blessing and sometimes hard, but love and enjoy every moment with your little ones and remember, patience is key.

Another Earth Day is coming around the corner, another trip around the sun, another 365 days of utilizing this planet’s greatest gifts—another day to celebrate all that Mother Nature has to offer and, most importantly, remember how grateful we should be for it. From the sun that shines to brighten our days to the food that grows to bring us health and happiness, the list goes on. 

Gratefulness only means so much, however, until action is taken. With the persistent looming of climate change constantly over our heads, our trips around the sun are becoming more and more harmful for the place we call home, and now is the time to act, innovate, and implement what needs to be done to protect it.

Certified Fish Friendly Farmers

This means that as an agricultural property, we have gone through the certification program that is managed to restore fish and wildlife habitats and improve water quality. Implementation of this program not only benefits the environment but also represents a cost-effective and efficient management strategy for our vineyards.

Reducing Carbon Footprint by reducing tractor passes

Through such, we greatly limit the negative impacts of tractor usage on the soil in the vineyards.

Reducing herbicide use with an increase in mechanization

Increased usage of organic-certified sprays during the growing season

We are not certified organic, but we use sprays that are OMRI certified to use if you are an Organic Farmer.

Decreased water usage with more precise irrigation scheduling

If there’s anything we know as Californians, it’s the drastic effects that drought can bring. As a winery in the Napa Valley, we’re more than aware of the constant danger of potential fires. Decreasing our own water usage allows for the resource to be used more where it needs to be and less where it doesn’t.

Building healthier soils through the addition of organic matter, cover cropping, and compost

Solar reduces our dependence on foreign oil and fossil fuels and gives us renewable clean power that is available every day of the year.

While we’re happy to have accomplished the earth-friendly practices we have, it’s only just the beginning of what we know still needs to be done to make sure we have a long-lasting planet for our generation, and also those to come. 

We invite you to reflect on your daily practices and see how you too can recognize your impact and make a sustainable difference. Big or small, there are many ways to get involved and take action—from reducing your personal plastic usage (and recycling and reusing what you can) to volunteering at local beach cleanups and reforestation projects, and even just reconnecting with nature.
