TASTING NOTES

This vintage carries a prodigious pedigree. Grown on the Bacigalupi Vineyard, this whole-berry, native yeast fermented red wine begins with brooding deep cherries, warm vanilla candle wax and fresh red berry bouquet. The flavors and mouthfeel lean towards the sensual side of the varietal. While drinking this wine in its infancy, there are fleshy plum and strawberry preserve flavors. Clean acidity stays on the top of the tongue for lift, while chewy and savory tannins wrap the sides of the palate and support the mouthfeel through the length of this unfiltered and unfined wine. Cellared properly, this wine will age well to 2025 and beyond.

WINEMAKING

Whole berry carbonique fermentation, by hand punch down cap management.  Open top fermenters, wild yeast and wild malolactic.

PRODUCTION

40% new Francois Fereres sur lie for 14 months. Bottled unfiltered and unfined.

Bottled 4/14/2015, 304 cases produced.
